Phoebe’s Breakfast: Green Eggs & Ham

If you’re looking for inspiration to get your kids to prepare their own healthy, quick and delicious meals, maybe they’d like to watch my 10yr old daughter collect eggs and cook her own breakfast. Actually, Phoebe eats Green Eggs and Ham all the time, for an after school snack or if she isn’t a fan of the dinner I’ve made. Basil is full of vitamins K, C, B6, Folate and C, the minerals calcium, iron, magnesium, phosphorus, potassium, zinc, copper and manganese, and contains flavonoids, helpful in cell structure and to fight off free-radicals.

We used 3 pasture-raised eggs, sautéed in butter, then added one slice of natural ham and about 2 Tablespoons of pesto. If you’re too lazy to make your own pesto, Phoebe’s favorite brand is Bear Pond Pesto.
