Red Curried Cod over Zoodles

Ingredients
- 1 pound firm white fish (like cod), cut into 1 inch pieces
- 1 cup fish or chicken stock
- 1 cup coconut milk
- 2 TBS red curry paste
- 2 medium zucchini, spun into noodles
- sea salt to taste
- 1 TBS cilantro
- 1 TBS scallions
- red pepper flakes (optional)
Instructions
- In a medium saucepan, bring the stock, coconut milk, and curry paste to a simmer.
- Add the fish and cook for five minutes.
- Add the zoodles and cook for another five minutes.
- Salt to taste.
- Garnish with cilantro and scallions, and red pepper flakes, if desired.
