I’m NOT a big fan of beets at all, but my husband grows them and loves them, and is always asking me to prepare them. Here’s a great summer side, even if you can’t stand beets (like me!) The honey and vinegar, plus chilling the beets, really take away that earthy taste that I find unappealing.
Simple Sesame Beet Salad (for people who hate beets)

Serves: 6-8 servings
Ingredients
- 8 medium beets
- 3 TBS red wine vinegar
- 2 tsp sesame oil
- 2 tsp honey
- 1 TBS Gomasio (or you can sprinkle sesame seeds and salt to taste)
Instructions
- If you have an Instant Pot, place the beets on the steamer rack with about 1 inch of water and press "manual" and set the timer for 20 minutes, releasing the pressure when finished.
- Alternatively, you can boil the beets for 45 min to 1 hour, until tender
- Place the cooked beets in a bowl of cold water.
- Remove the outer peel from the beets with your hand. I find simply "twisting" the skin with two hands works really well.
- Slice the warm beets on a cutting board and place in a large bowl.
- Sprinkle with the vinegar. (it's important to do this when the beets are still warm, so they will suck in the vinegar). Allow to sit for five minutes.
- Combine the sesame oil and honey in a small bowl and drizzle over the beets.
- Sprinkle with the gomaso.
- Serve lukewarm or chilled.
