Red Curried Cod over Zoodles

  • 1 pound firm white fish (like cod), cut into 1 inch pieces
  • 1 cup fish or chicken stock
  • 1 cup coconut milk
  • 2 TBS red curry paste
  • 2 medium zucchini, spun into noodles
  • sea salt to taste
  • 1 TBS cilantro
  • 1 TBS scallions
  • red pepper flakes (optional)
  1. In a medium saucepan, bring the stock, coconut milk, and curry paste to a simmer.
  2. Add the fish and cook for five minutes.
  3. Add the zoodles and cook for another five minutes.
  4. Salt to taste.
  5. Garnish with cilantro and scallions, and red pepper flakes, if desired.
