Simple Sesame Beet Salad (for people who hate beets)

Ingredients
  • 8 medium beets
  • 3 TBS red wine vinegar
  • 2 tsp sesame oil
  • 2 tsp honey
  • 1 TBS Gomasio (or you can sprinkle sesame seeds and salt to taste)
Instructions
  1. If you have an Instant Pot, place the beets on the steamer rack with about 1 inch of water and press "manual" and set the timer for 20 minutes, releasing the pressure when finished.
  2. Alternatively, you can boil the beets for 45 min to 1 hour, until tender
  3. Place the cooked beets in a bowl of cold water.
  4. Remove the outer peel from the beets with your hand. I find simply "twisting" the skin with two hands works really well.
  5. Slice the warm beets on a cutting board and place in a large bowl.
  6. Sprinkle with the vinegar. (it's important to do this when the beets are still warm, so they will suck in the vinegar). Allow to sit for five minutes.
  7. Combine the sesame oil and honey in a small bowl and drizzle over the beets.
  8. Sprinkle with the gomaso.
  9. Serve lukewarm or chilled.
