At summer’s peak, this simple side dish is a fantastic addition to anything you’ve got on the grill. I love dishes that incorporate all seasonal ingredients in one easy dish. This is so good that I made it three nights in a row for my family. Even my kids love it!
Perfect Summer Side: Zucchini, Tomatoes and Bacon with Basil

Ingredients
- 4 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 large or 2 medium zucchini, chopped
- 3 medium tomatoes, chopped
- ¼ cup chopped basil
- Sea salt and freshly ground black pepper to taste
Instructions
- In a large skillet over medium heat, add the bacon and sauté for about three minutes.
- Next, add the onion and cook for another five minutes.
- Now add the garlic, zucchini and tomatoes and allow to sauté until the tomatoes are liquid - about five to seven minutes.
- Remove from heat and add the basil, salt and pepper.
