Poached Egg with Tuscan Hash: Paleo Lunches and Breakfasts on the Go

This combination is really amazing. It’s sweet tasting from the sundried tomatoes and sweet potatoes, and rich from the pork and herbs. Fresh basil brightens it up and gives it a fresh taste. It’s a great breakfast to power you through the morning without needing to refuel. I really like making a double batch of this and reheating as needed through the week for breakfast. You can poach the egg at home the traditional way, but I also offer a way to enjoy a warm, runny egg over some incredible hash right at your office. This classic dish works well for breakfast or for lunch! This recipe is from my book, Paleo Lunches and Breakfasts on the Go.

Poached Egg with Tuscan Hash: Paleo Lunches and Breakfasts on the Go

Ingredients
  • 1 TBS bacon fat 1 onion, diced
  • 2 cloves garlic, minced
  • 1 Japanese sweet potato, roasted, peeled and diced
  • 1 tsp fennel seeds
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1lb pastured pork or lamb
  • 3 TBS sundried tomatoes, minced
  • 3 TBS fresh basil, sliced
Instructions
  1. In a large skillet, melt the bacon fat.
  2. Add the onion and sauté for about three minutes.
  3. Add the garlic, sweet potato and dired herbs and sauté for five minutes.
  4. Now, add the ground meat and cook until done, about seven minutes.
  5. Add the sundried tomatoes for another three minutes and incorporate well.
  6. Remove from heat and add the fresh basil.
  7. To make the poached egg at your office, all you need is a microwave safe bowl, some water and an egg. A glass pyrex dish works well for this.
  8. Crack the eggs into the water and pierce the yolks once with a fork.
  9. Microwave on high for approximately 90 seconds. All microwaves are different, so depending on how powerful yours is, the timing might be slightly shorter or longer.
  10. With a slotted spoon, remove the eggs and serve over the warm hash.

  1. Would love to win this for my sister, recently diagnosed with chronic disease and told to go grain free and dairy free. She’s overwhelmed, mostly with her on the go meals, this would be so helpful!

  3. My favorite paleo lunch is pretty simple. Some salad greens, some protein and some fat from a homemade dressing or some avocado. I would love this book to expand to some more exciting lunches!

  4. My favorite paleo lunch is a simple almost grab-and-go kind: smoked salmon, avocado, and a nori wrap. Throw some more veg in the lunch for sides and maybe an orange and that’s a wrap! Need more ideas though for variety, so this book would be MIGHTY handy!

  5. Mmm this looks and sounds delicious! I was looking for the perfect Tuscan themed dish to surprise my boyfriend with the 2 week Tuscany villa rental that I just booked for us. I absolutely hate rosemary, so if I don’t use it does it change the entire taste of the dish?

  7. Really good. I made this alongside the Chopped Greek Salad with Garlic Croutons for the site and it was a nice and flavorful meal. I didn’t broil my eggs. I had the oven on already, so I just popped them into the oven for 1 minute and they were done.
