Skirt Steaks with Mojo Sauce

Sometimes people are intimidated with skirt steak but it’s one of my favorite cuts because of how versatile it is. It’s long, flat, and full of flavor. Try this steak over a green salad or in tacos. A small, 3oz serving of skirt steak provides almost half of the daily value of vitamin B12, and it’s also a great source of zinc.

Skirt Steaks with Mojo Sauce

Ingredients
  • Steak
  • 6-8 oz. Skirt Steak
  • ¼ tsp. Salt
  • ½ tsp. Ground Cumin
  • ½ tsp. Dried Oregano
  • 1 clove Garlic, grated
  • ½ tsp. Orange Zest
  • ½ tsp. Lime Zest
  • ½ Tbsp. Olive Oil
  • Pinch of Black Pepper
  • Sauce
  • Juice from ¼ Orange
  • Juice from ½ Lime
  • ¼ tsp. Lime Zest
  • ½ tsp. Dried Oregano
  • ½ tsp. Ground Cumin
  • 1.5 Tbsp. Coconut Aminos
  • 2 tsp. Honey
  • 1 tsp. Olive Oil
  • Pinch of Salt
  • Pinch Red Pepper Flakes
Instructions
  1. Directions:
  2. Heat a cast iron skillet in a 375 degree oven for 15 minutes. While the skillet is heating, mix together the steak rub ingredients and rub all over the steak.
  3. Whisk together all of the sauce ingredients together and set aside.
  4. Take the skillet out of the oven and turn a burner on medium-high heat. Sear both sides of the skirt steak for 1 minute.
  5. Pour half of the sauce on top of the steak and allow it to roll off onto the pan and bubble for a few seconds. Transfer the pan into the oven for 2 minutes.
  6. Pour the remaining sauce in the pan and place back in the oven until the steak reaches the doneness of your liking (take out around 125 or 130 degrees for medium-rare). Allow the steak to rest for 10 minutes before slicing and topping with sauce.

  1. This looks so delicious and I love that you used a skillet. Citrus zest is my favorite way to season things! I’m going to try this recipe for the 4th of July – but I’m thinking I’m gonna try to grill it! Thank you for the inspiration!
