My friends at LMNT asked me to develop a recipe with the flavors from their chocolate medley electrolyte powders. I know lots of folks love to drink them mixed with hot water, but I wanted to come up with something more creative and Chef, (Issac Hayes) in South Park, was literally the first thing that came to mind…
But seriously, you could bring these to Thanksgiving or any holiday gathering as a small bite-sized dessert. And, I bet I nobody would realize how healthy they are, because they’re so incredibly delicious!
I even think they’re going to make it into my regular routine as an after meal treat. As I mentioned, the chocolate electrolyte flavors from LMNT are great on their own mixed with hot water or coconut milk, but give these dessert balls a try because they’re loaded with healthy ingredients and are a great, salty, nutty and chocolatey fix that will perfectly solve your sweet craving without spiking your blood sugar.
Recipe:
Yields about 18 salty nut balls (depending on how big/small you make them)
Ingredients:
- 1 cup whole or chopped pecans
- 2 packets of chocolate LMNT (any flavor you wish)
- ¼ cup chopped walnuts in small pieces
- ¼ dark chocolate chips
- ¼ cup unsweetened cocoa powder
- 1 scoop (10g) unflavored collagen powder (optional for more protein)
- ¼ cup almond or peanut butter
- 2 TBS coconut oil
- 2 TBS honey or monk fruit powder
- 1 tsp vanilla extract
- Extra cocoa powder for dusting
Instructions:
- Add the pecans to a food processor and pulse until they’re a coarse powder (sort of a rough almond flour consistency).
- In a large mixing bowl, add the pecans along with one of the packets of chocolate LMNT, the walnuts, chocolate chips, cocoa powder and collagen powder and mix.
- In a microwave safe bowl, add the almond or peanut butter, the coconut oil, and the honey or monkfruit. Microwave for about 15 seconds or until it’s all warm and blended. Stir well.
- Add the vanilla extract to the wet ingredients and stir.
- Combine the wet ingredients to the dry ones and mix with your hands until you have a consistency of dry cookie dough.
- Form little balls, a little smaller than golf balls.
- Sprinkle some cocoa powder on a plate and mix it with the second packet of chocolate LMNT.
- Roll the balls in the cocoa powder and LMNT mixture.
- Enjoy or store in an airtight container in the fridge for up to a week.
