Pigs-in-a-blanket memories run deep in my family, but when I was diagnosed with Celiac and began my own health journey, I nixed the blankets and ate my pigs naked.
Until I learned of “fat head” dough. This magical dough is made with almond flour and mozzarella cheese and can be made into garlic bread, calzones, pizza crust, and…drumroll…blankets for my pigs!
I made these using Teton Waters Ranch Bun Length Uncured 100% Grassfed Beef Hot Dogs, but you could also use their Smoked Cocktail Sausages for a fun appetizer.

Keto Pigs-in-a-Blanket

Makes 10 servings
Ingredients
- "Blanket" Dough
- 1½ cups almond flour (plus a dusting to roll out dough)
- ½ tsp salt
- 1 whole egg
- ½ tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp baking powder
- 1½ c shredded mozzarella cheese
- 3 T cream cheese
- ½ cup grated parmesan cheese
- 1 large egg, beaten
- 2 - 8oz packages of Teton Waters Ranch Bun Length Uncured Beef Hot Dogs
- Optional
- 1 egg yolk
- 1 T black sesame seeds
- 1 T Gomasio (seaweed, sesame seeds and salt blend)
- 1 T toasted onion flakes or granulated onion
Instructions
- Mix the almond flour, salt, whole egg, baking powder, garlic powder and Italian seasonings in a bowl. Set aside
- Mix the mozzarella, cream cheese and parmesan cheese in a separate bowl and heat in the microwave for about 2 minutes or until just melted.
- Remove from microwave and mix well.
- Combine the cheese mixture with the almond flour mixture until well blended. Add the egg and incorporate until you have a moist dough. It will feel sticky and gooey, that’s ok. Form into a large ball.
- Preheat oven to 400 degrees F.
- Line a baking sheet with parchment paper, set aside.
- Sprinkle some almond flour onto a large cutting board or counter where you want to roll out the dough.
- Press out the ball of dough and then roll until it’s about ¼ to ⅛” thick.
- Cut 10 small rectangles out of the dough, enough to cover each hot dog.
- Press the dough around each hot dog.
- Place each dough-covered hotdog on the baking sheet. You can now skip to step 15 or apply the optional top coating in the next few steps.
- Mix the egg yolk in a small bowl.
- Mix the sesame seeds, Gomasio, and toasted onion in a separate bowl.
- Brush the top of each hot dog with the egg yolk, then sprinkle with the sesame seed mixture.
- Bake for approximate 15 min or until lightly browned.

How much mozzarella cheese by weight? I grate my own, so would it be finely grated or regular?
